The composition of molasses varies considerably depending on the non-sucrose in the raw juice and processing technology, but it can be considered approximately.Â
For sugarcane molasses :
75–85% of total solidsÂ
30–36% sucroseÂ
10–17% (fructose + glucose)
10–16% ash, and some smaller quantities of polysaccharides.
